FISHERMAN’S STEW
INGREDIENTS
225 g fatback pork, medium dice
4 large cod filets, roughly 340 g each
8 large potatoes, large dice
3 large white onions, sliced
1 liter water
4 tablespoons butter
INSTRUCTIONS
1. In a medium to large pot over medium-low heat, add fatback pork to render. Stir continuously, do not allow fatback to color.
2. Raise heat to medium and add onions. Stir occasionally and cook until translucent, about 5-7 minutes.
3. Add water, bring to a boil.
4. Add potatoes, cook until ¾ of the way cooked through, 7-10 minutes.
5. Add cod filets and reduce heat to low. Cover with lid and simmer for 7-10 minutes or until fish is opaque and starting to flake.
6. Add butter.
7. Season with salt to taste.
